Depends on what you want to use it for, if you intend to use it for straightforward "point & shoot" photography then £120 should get you a perfectly good 3.2megapixel one from a brand name like Canon or Olympus (go £150-200 for a few more bells & whistles)
I've got 2 (long story, don't ask) both are 3.2M and suit me just fine, most digital cameras have the facility where you can choose the quality (resolution) of the picture you want to take and many have a video option with sound recording too.
5 megapixel cameras are now a lot cheaper, in fact not much more than a 3.2 but personally I don't think they're necessary for normal pictures unless you want them blown up to poster size
The best word of advice I would offer is to get the biggest memory card you feel comfortable in paying for, I have a 64Mb card in each of mine which will hold approx 120 medium resolution pictures or 40 high res and cost me about £20 at Jessops (great shop btw, p!sses on boots for anything to do with cameras)
If you want to do real professional-grade digital photography then get a digital SLR (much better lens, zoom, focus etc than a normal camera) usually at least 5 megapixels but be prepared to pay £500 for the most basic one
