I dont do the water starch thing, though I might now  :)

Heat up olive oil in a pan, leave to heat.

Get some flour (plain) half a can of beer drink the other half thats what makes cooking these a pleasure, mix flour and beer together (or buy beerbatter mix) add a little salt and pepper.

So the batter is made, throw the chips in batter (coat them) then staight into the pan. 

And wham bam thankyou mam you have beer battered chips that taste devine !  :nod

This sounds interesting Bamaga man....

Didn't know chips could be cooked in beerbatter...actually don't know what usually is. May give it a go... :)

(btw I don't soak chips for long, only about 3 or 4 mins in cold water and you can see the starch at bottom of bowl when you take chips out. I think the longer you soak them the more starch you get out..I think......only it's best not to soak them for too long as they start to go a brown colour..  :no )

Now that I am back in New York for the summer I have the pleasure of going to the chip shop (A Salt and Battery) evey Friday. I would go more often but they charge like their trying to make their profit in pounds.

When I was a kid you used to be able to get Chip Fingers , they were big f'uck off chips dipped in batter , lovely stuff . Haven't seen them for years  :(  .

I use potatoes, peel and slice them, heat the fryer up put them in for a few minutes to Blanche them, take them out leave for 5 minutes them put them back in

Simple but affective

I thought Ale Batter was used for Fish ? first time i have heard of chips being done in it !

On a side note does anyone get Fish Bits from the Chippy ? They actually charge you for them now !!

The above technique is almost correct.

What you need to do is cook em slow - 160C should do it, for a few minutes. Lift them out and whack the Temp up to 190C, wait til the oil is mad hot then finish cooking until 'crisp and golden' and reminiscent of the days when a chip was a CHIP and not a f**kin wimp, boiled to buggery in second grade fat...speaking of which, a combo of Lard and Beef Dripping topped up with the usual bog standard will suffice.

Extra tip: Sprinkle em with Curry powder after.
