kazza has got it right with hamburger hill. that film is just harsh...
id say, for war films:
glory (one of the best, deservedly won an oscar, american civil war, denzel washington at his best. morgan freeman, cary elwes... genius
black hawk down: a great ensemble cast, lots of action but also filmed in that documentary style way with less frames per second giving all the action close up
saving private ryan: the opening sequance and the sharp shooter. great film
the great escape: a xmas classic and one of the coolest films of all time
platoon/full metal jacket: shown through the eyes of the young, a kick in the face in that good film way
hamburger hill: just a harsh film. great acting, lots of bonding and just the harsh reality
the pianist: people complained when daniel day lewis didnt win the best actor oscar but when they saw adrian brody act in the pianist they couldnt argue. a great film, very emotional, very cool
