I saw this recommended on tv, it gets the starch out and chips are meant to taste better. (Water turns cloudy because of the starch)
Then dry chips with some kitchen paper or tea towel, otherwise they would make the fat spit..
Then I fry them in veg oil and apparently they tast ok...
