People shouldn't age much over a period of only a 100 days or so, and I think the thing with Hurley and the weight was addressed as part of one of the "mysteries of the island" I think the main reason would be that it would either screw up all the flashback/flashforward shots or he just couldn't loose weight

Ep 3 was brilliant, i have to say the start of this Lost series has exceeded all expectations. Its certainly hooked me again big time
